I have two pairs of extractors (and 2 motors 253/308)

both pairs of extractors on passenger's side are the same i.e. back two cylinders two into one, and from two into one.

Drivers side though, one pair is same as above back two cylinders into one while the other set has the No 2 & 4 together and 1 & 3 together.
I just wondered which would be better and why the difference...

But on the right hand side you will notice f

The way you got them numbered is right. Passenger side is 2,4,6,8 from front to back.
At a guess from what you've said, I would say they would improve on both torque and HP simply because the engine should run a little better without 1 pair of cylinders
