does running a holley 850 DP in a unworked 351 give any advantage or disadvantage

My experience prefers a smaller carby doing more work than a larger one. The faster air stream through the venturis on a smaller carb mixes fuel better. I was a crew member on NASCAR in australia and they run a 600 on a 350 chev. And they go fairly hard

A 850 DP is too big for a stock 351 you should use a 600 vac as it works the best

I have found with my stock 351 4V that the best performance and fuel economy that I have ever had was throw the holley in favor of a carter 625cfm AFB carby.
