HQ 350chev th400 2.78diff what would be the smallest jets I can run in the carb And still have the car run fine, thought it may help economy

I would say 65's would be in the neighbourhood.
Easiest way to tune a holley's main jets(besides a dyno) is to find a long stretch of road that runs up hill(not too steep) and drive up it at about 80kph using a lite steady throttle(you don't want to be
