What car is it for, a 1 tonner, Commodore, Kingswood. The weight of the car and what you are using it for will influence the diffe ratio.

A 3.08:1 will get you off the line quicker or move a heavy load, but will rev higher on the highway.

A 2.78:1 w

You only have to be in front at the end of the race.

Also depends on the wheel and tyre size.

i think with STD rims, 253 pushing a manual M20 thru 2.78 is too tall.
i have inherited this combo ^^^ a few times before.
Even in the country, too tall.
Go for 3.08.

Old holdens brought on the spot, quick decision, cash paid.
