I have a HQ V8 differential and either side of the centre part
with the gears it has 2 winged bits, I'm wondering if they are
used for anything or maybe could I cut them off to give the differential a cleaner look.

They are where the upper contral arm bushes go on sedans/wagons/statesmans. You should be able to cut them off.
