You are not far off the mark.
8 is GMH, not Holden. It covers other stuff built by GMH like Torana, Bedford, Chev trucks etc too.
14 is Brougham
K is H.
R is RH drive.
302 is the 302nd HK Brougham body out of the Pagewood body plant.
H5 is Pagewood location.
1146 is the exterior paint combination code. 14M is the interior trim. 1146 is Hacienda Blue metallic. The K, L, M, N trims are a bit of a funny setup with Brougham. 14 is Jacanda blue, the M is from memory cloth on both seats and door trims. Have a read here:

587-1286 is the refinish paint code for the main part of the body. In this case a metallic.
INSERT isn't really used on these.
TOP would have a refinish code here if the car had say a white roof. In which case the 4 digit part of the TRIM line would be a different number to reflect white roof over other colour lower half.
HK25285 (there is SS after this, one S above the other) is the chassis number.
81469KH531181 is the VIN. 81469K means the same as it does on the body plate. H531181 is the PSN (Plant Sequence Number, Plant Serial Number or other such words). This is the key number on a GMH product. For Pagewood this started at H500000 back around 9/67 and includes all vehicles assembled at Pagewood, not built as many say. Assembled as it includes vehicles partially built at other body plants, like for example HK vans are basically half built at Elizabeth (out of the Elizabeth body plant) and finished at Pagewood assembly plant. Same for the Chev and Pontiacs, they were partially built at Woodville but assembly completed at Pagewood. Your Brougham is the 31181st vehicle with assembly completed at Pagewood since around 9/67 when the PSN system started.
By the chassis number i'd place your Brougham's body built and assembly in the second half of July 1968 as an estimate. Engine number around 30713xxx
