Try Classic and Muscle Restorations.

I know the guy that owns the Bronze HT that is on the website, he has spent a lot of money, but the car is up there in terms of quality.

One of the guys I know in the Monaro club does a bit of contract work for them re-assembling the cars.

I quess it just requires you to contact all the places that are mentioned and see what they have to say, ask for phone numbers of previous customers. If they have a good relationship with their customers they will have no problem giving out the numbers, as their customers should only have good things to say. Then when you ring the customers, ask to see the cars, then ask all the questions and see what they really thought of the experience.

It will be a long expensive process doing the resto, so you want to make sure you are happy with those people that are doing it.

Good luck.
