Do you think fitting of extractors to an EL V8 Fairmont could cause a car to surge and overheat easily?

Surge possibly, overheat possibly if theres a blockage somewhere - with the car running put your hand over the end of the exhaust and make sure there is enough exhaust making it out.

However if you have a dual exhaust this method is unlikely to work b

extractors will in most cases increase the temp of the engine bay.i dont think they would make your car over heat.your car maybe surging because it needs to be retuned for the extractors?a car that surges/runs rough will generaly cause a car to run hotter

like tuff 250 said, extractors can increase your under bonnet temp but shouldnt make the engine over heat. if your car is surging it may be running out of fuel due to a bad fuel pump or fuel filter or even something wrong with the fuel pressure regulator.
