Any `good` restorer will be pricey, metal finishers charge $60-80 per hour most crash shops work on about $40.00ph if you can do some work yourself like taking off bumpers ,chrome work etc it will save you money in labour. A member of our club in SA has a crashshop he quoted a guy $7000. to do some rust and paint on a HJ monaro, yet another guy said his friend who works at a crashshop would do his HJ wagons rust and paint for $2500. I guess you get what you pay for but I would ask to see some of their work before committing.

Restorer that doesn't cost the earthe = bad resto job
Cloudy is on the mark, pay $80 per hour and you should/will get a resto job that out lasts you.
Re DIY, that's well and good if you are handy with panel beating tools. Way too many cases of DIY guys having to go and get someone to fix upi their issues.
Get yourself a budget, eg 20K and stick to it
