The first one will be a nice combo.
If it is old or rare - Cut it! http://www.ehlimo.com.au/

I'd go the second if you want it easy and cheap, plus you can use up to a 2000 model VSIII engine, not just VN.

A Chevy will be cheaper to build and has TPI available if you want injection. It will bolt up to a TH350 or a Chev powerglide without having to worry about bolt holes and dowel positions. You could also use the TH700 with the lockup convertor for the high

You only have to be in front at the end of the race.

You need a hell of, a lot of torque for a 3 speed, especially if you are towing anything.You can get a higher top gear and a similar lower ratio with 4 speed auto. 5 litre EFI T700.

You can't tow in top gear in an original TH700, that is one of their weaknesses.
I'd still stick with the TH350 because:
They are stronger and heaps less problem;
Uses HT/HG V8 powerglide crossmember;
Uses HK/HG V8 powerglide/trimatic/manual tailshaft
