I mentioned that I have an old Hot Rod with a 186 that I've done a fair bit or work on and had even more done. The engine has been in the car for about 50 years, it had good compression and oil pressure. Part of the work I had done was complete rewiring and thermatic fan fitted because it over heated when stuck in traffic.

The rod shop replaced the thermostat with a standard 82C degree one. I reckon the previous thermostat might have been stuck open. Anyway, when I start the temperature from the sender at the back of the head now goes goes up to 120C, then plummets back to 80, then goes up to about 100 then settles at 80. The high temp indicator light is at the front of the head and doesn't come on. I'm a bit worried about that wild cycling and thinking about swapping to the coooler thermostat set at 71 degrees.

What are the pros and cons? Am I stressing about nothing? Maybe all engines do this but mine just shows it up with the gauge sender at the back?

Sounds like the thermostat the Rod shop installed is faulty or you have a faulty temp gauge or sender unit.
I wouldn't go as low a a 71 deg thermostat, I'd stick with something around the 80 deg C.
