HQ sandman (dont know your name sorry) have you ever had any problems with the saginaw behind the chev and how hard do you drive it? Im tossing up if its worth me rebuilding the one I have to put in my ute.

What sort of fans are you running. Even though they're 12" check how much airflow they are pulling.
I always run a thermostat. Mine has got an old 5 core radiator with 2 Camira fans on.(Don't laff. they pull a lot of air and have good shrouds)

If your block is .060" oversize already, there's not much point in rebuilding it, unless the bores are in really good condition. Zero wear!! Just hone and re-ring it.
A near stock NEW 350 crate engine will cost about $2900 for a long engine.
