Fairly sure you will need the engineers certificate and if you get pulled up on the side of the road you will need it any way.

If you have the old rego papers with the rego, chassis and engine numbers, then they should just re-register it once proof of ownership and a roadworthy are presented.
If it is old or rare - Cut it! http://www.ehlimo.com.au/

If in fact you do get pulled over, would the average recruit know the difference between a 308 and a 350? Would they know what engine should be in there?

In NSW you can run up to 15% above the biggest engine available in the sedan equivalent and "self Engineer". 350 is withing 115% of 308. Have a read on the RTA website. It'll have to stay on straight LPG though. It must be a factory BO6 special vehicle package (Ambulance) to be a 308 1-tonner. It will have been a 308 TH400 column shift with Premier front and door trims. Normally they also had GTS dash and bucket seats too.

Probably not. I was just going from my nephews experience. He had to get engineers certificates for bucket seat conversion and bullbar. He was living in Orange and drove a feral HZ ute and was a sitting duck and got defected and had to get the certificates and then got pulled up regularly after that and had to produce them.

Anyway, good luck with the RTA and no doubt it will sail through its blue slip without a bat of an eyelid, they will more likely pick up worn door hinges.
