Based on the knowledge & experience I have from my daily work with hydraulic cylinders & their seals, the material is not really a factor - it's the surface finish that chops out the seal prematurely.
A well honed & polished finish in the S/S sleeve should present no problems. A clutch master & slave are simply small scale hydraulic cylinders.

There are many examples of S/S hydraulic cylinders used in applications where mild steel or alloy is unsuitable - such as corrosive environments, and they still last well.
Cheers,

Mick
