The obvious answer is the finely tuned machine that gmh built is too gutless, being the engine, but ill instead ask if teh gearbox is kicking down properly when you get on the loud pedal?

ok, are the shift points the same as before?

torque convertor hasnt been changed/altered or otherwise molested?

i cant think of much else that a transmission would do that causes the engine to lose performance, so thats all i got :)

Get a pro to check it out.

The fault(s) could be many & varied, electrical , carby, mechanical or a combination of the all three.

With HEI, open the plugs up a bit compared to std points ignition. MY HJ (350, HEI) felt sluggish and ran rough. Opened plugs up from standard 35thou to 60thou - new car. Ran heaps better, uses less fuel.
Also, try advancing the ignition a couple of degrees at a time. Should notice the performance improve as the timing is advanced, until you start to get detonation under load / acceleration. Then back it back a degree at a time until you get the balance of power vs. ping
