Brake and clutch fluid change old and new model

I have sucked out the fluid from the braking system on the old girl. Started at the rear N/S and flushed a good amount of Castrol dot 4 through. should the clutch be done as well and are there any traps? As well as looking after my old car the VE I now have to drive daily was serviced always by the dealer. Now its mine I did a 60k oil change as it so easy and i like to use a good oil. The stuff that came out was watery black stuff. Little viscosity between the fingers. I noticed the service book that you take into the dealer when leaving the car was blank on the 45k page. At 45k I left it at the dealer for its 45k service and when i picked it up the guy had to reset the service alert. Thinking about this with now 60k up i took the book back to the dealer who looked at his screen and said of course it had all been done..and filled it out..Should i believe? The brake fluid was due at 45k and looking at the nipple area it has never been touched i am sure. so can i suck it out using the same methods used on the old car? I use a jar with a 12v pump and tubes i made up. And will dot4 do for the VE? Thanks to the Forum.
