Ive been told 350 heads(double hump) on a 400 block will raise the compression ratio but ive also read that 350 and 400 heads are the same apart from the steam holes on the 400 heads.
So can anyone tell me whats what with these cylinder heads as far as increased compression is concerned?

Depends on the combustion chambers, there are lots of different double hump heads.

Some 350 and 400 heads are the same bar the steam holes eg 882's. Other 350 heads are very different.
