Although it sounds simplistic, the position for the new mounts need to be where the motor sits right.
If you have access to an EH crossmember out of a car, measurements or a template can be made to accurately position the new engine mounts.
The 4 x mounts for the EH & HR front ends can be used as your references to then locate the engine mounts.
It is possible to re use the HR mounts if you cut them off the HR front end carefully.
Some will suggest to fit front end in the car, then drop the motor in & tack/weld the mounts in place.
This can work, but is a bit hit & miss, particularly without another car to reference engine position from.
Biggest mistake is positioning the mounts too low. Drag link will then hit the sump on full steering lock.
You're right with EH sump, that's what you need for the conversion.
